We made a very special discovery at the “Earth Market”: Rankel's walnut specialties.

 

The walnut, a super food, is the basis of all regional delicacies and liquors offered at the market. We would like to have a closer look at it and therefore visit Bernhard Rankel at his production facilities in the Burgenland region.

 

Rankel harvests his walnut trees by hand. Afterwards, he transforms them in different maturation phases into different products. During our visit, we try a walnut liquor and another speciality: black walnuts. From harvesting to the final product, it may take between three to four weeks. Therefore, the black walnuts are one of the most sophisticated products in Rankel’s range.  

 

With its slightly fruity touch, the black walnut is a perfect addition to our savoury strudel. Therefore, we take the black walnuts from Burgenland to Berlin in our next125 kitchen. The recipe can be found here.
